Prawns in Tempura Batter

Method
Wash and clean the prawns and put the oil on to heat up to 180ºF /350º C.
Butterfly the prawns by making a slit down the underside of the prawn and open it out. ( You can also just slice the prawns in half). Set aside while you make the batter.
Mix all the ingredients together in a bowl making sure to work quickly so the sparkling water stays cold. Add as much extra water as you require to make a light batter.
Dip the butterflied prawn into the batter and place into the oil putting it away from you as you put it into the hot oil.Do not overcrowd the pan as they will stick together.
When the prawn is a light golden brown remove from the oil and place on a kitchen towel to drain. Continue to cook the rest of the prawns.
When all are cooked season with salt and pepper and serve immediately.
This also works extremely well with thinly sliced pieces of salmon and finely sliced vegetables.
