Pilau / Pulao / Pilaf Rice

300 g Basmati Rice
              710 ml Water
              2 tbsp Vegetable Oil
              ½ tsp Cumin Seeds
              1 Cinnamon Sticks
              2 Cardamom Pods (Green)
              1 Bay Leaf
          Wash the rice thoroughly and soak for 1/2 day.
Heat oil in a non stick saucepan, add cumin seeds and dry spices and wait for them to splutter. When they have turned a few shades darker add the rice and carefully stir the rice until it is all coated and glistening and slightly translucent. Add boiling water and salt to taste. You can add Saffron to the boiling water if you like.
Cook uncovered until it comes to the boil and then cover and turn the heat down to its lowest possible temperature and leave for 10 minutes approximately. Remove from the heat and leave to sit until you are ready to serve ( at least half an hour ). This will serve 4 people.
