Bengali 5 Spice or Panch Phoran

1 tbsp Fenugreek Seeds
1 tbsp Nigella Seeds
1 tbsp Fennel Seeds
1 tbsp Mustard Seeds (Black)
1 tbsp Cumin Seeds

Take equal quantities of the spices and roast them in a dry pan until you smell the aroma of the spices. Do not allow them to burn. Remove from the heat and place in a (clean) coffee grinder. Grind to a powder. Store in an airtight glass jar, out of the light.
