Onion Bhajis

Method

1 Onion
150 g. Gram Flour
½ tsp. Chilli Powder
½ tsp. Turmeric Powder
1 tsp. Cumin Powder (Ground)
200 ml. Salt (Kosher)
½ l. Vegetable Oil

Slice the onion and set aside.

Mix all the dry ingredients for the batter in a bowl.

Add enough water slowly whilst mixing to form a thick batter.

Heat the oil in a deep wok or thick bottomed saucepan.

Gently coat the onion slices in the batter, pick up a clump of onion mixture and carefully place it in the hot oil.

Fry until golden brown over a low to medium heat, gently turning every so often.

Serve hot with a chutney.

A very simple chutney recipe for mint yoghurt is plain yoghurt with a bit of mint jelly added and a pinch of salt.
