Cheese Bomb

Serves 12

Ingredients

Method

350 g. Cheese (Red Leicester Grated )
350 g. Cheese - Cheddar (Strong Grated)
1 Garlic Clove (Grated) you can add more if you like garlic
1 Red Onion (Finely Chopped)
1 Bunch of Onions (Spring)
2 Onion (Shallots chopped finely )
1 Chives (Fresh Bunch chopped finely)
750 ml. Mayonnaise
1 Medium Chilli (Red)
1 Bread (Round Ball Like Loaf)
1 Pepper (Red)
1 Pepper (Green Bell)
3 Carrot
4 Celery
1 Cucumber

Preheat the oven at 180º C 350ºF

Place all the mixture into the hollow in the loaf of bread, packing it in tightly and replacing the lid on the top.

Wrap tightly with at least three layers of foil. Place on a baking sheet and bake in the preheated oven for 45 - 50 minutes.

Whilst the bomb is in the oven, you can prepare the crudités .

Slice the vegetables into buttons and place around the edge of a large plate or tray. Cube the bread from the centre of the loaf, drizzle with olive oil and bake in the oven until the cubes are crunchy. ( You can just leave the bread unbaked but the baking gives another texture on the plate.)

When the bomb has cooked for 45-50 minutes remove from the oven and allow the bomb to cool. When you can handle the foil, remove it and place the bread loaf in the centre of the large plate or tray and scatter the crudités around the loaf. When you are ready to serve it, remove the lid and your guests can use the crudités to scoop the filling from the centre and as the filling goes down in the loaf you rip the bread from the sides and use it to dip .

N.B. The Crudités are a matter of choice, they can be any or all of the above. They can also be Nachos, crackers etc.
