Apricot and Orange Mincemeat

275 g. Apricots (Dried No Soak)
1 Orange (Zest and Juice)
900 g. Mixed Fruit
60 ml. Orange Marmalade
450 g. Sugar (Demerara )
225 g. Shreaded Suet (Vegetable)
1½ tsp. Mixed Spice (Ground)
¼ tsp. Nutmeg (Ground)
250 ml. Brandy
Start the Mincemeat the day before by soaking the mixed Fruit in the Brandy in one bowl and the Apricots in cold water in another.
Next Day remove the apricots from the water, pat them dry and chop them into small pieces. Add them to the mixed fruit together with the zest of the orange and 45ml of Orange Juice.
Add the spices, sugar, shredded suet and the orange Marmalade and stir well to combine all the ingredients. Cover with cling film.
Leave for 24 hours before placing in sterilised jars, pressing the mixture down tightly. Store in a cool dry place for up to 6 months.
