Arrosto di Maiale con Erbe

1 lb. pork loin roast
4 tbsp. olive oil
5 cloves garlic, minced
2 tbsp. fresh rosemary, chopped
2 tbsp. fresh sage, chopped
1 tbsp. fresh thyme, chopped
1 tsp. salt
½ tsp. black pepper

Rub the pork loin roast all over with olive oil.

In a small bowl, mix together the minced garlic, chopped rosemary, sage, thyme, salt, and black pepper.

Apply the herb and garlic mixture evenly over the pork loin.

Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).

Place the seasoned pork loin in a roasting pan.

Roast in the preheated oven for about 1 hour and 20 minutes, or until the internal temperature of the pork reaches 145 degrees Fahrenheit (63 degrees Celsius).

Once cooked, remove the pork loin from the oven and let it rest for about 10 minutes before slicing.

Serve the slices warm, ideally with sides of roasted vegetables or a fresh salad.
