Colomba di Pasqua

¼ cup warm water
2 tbsp. sugar
3 tbsp. active dry yeast
½ cup all-purpose flour
3 cups all-purpose flour
½ cup sugar
½ tsp. salt
3 eggs
1 yolk from one egg
1 tsp. vanilla extract
Zest of 1 orange
Zest of 1 lemon
¼ cup unsalted butter, softened
¼ cup candied orange peel, chopped
½ cup whole almonds
2 tbsp. pearl sugar

Prepare the sponge by combining warm water, sugar, yeast, and 1/2 cup flour in a bowl. Stir well and let it rest for about 30 minutes until bubbly.

In a large bowl, mix together 3 cups flour, 1/2 cup sugar, and salt. Add eggs, egg yolk, vanilla, and citrus zests. Mix until well combined.

Add the sponge to the dough mixture and knead until smooth.

Gradually incorporate softened butter and knead the dough on a floured surface until it is smooth and elastic, about 10 minutes.

Fold in candied orange peel gently.

Place dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 3 hours until it doubles in size.

Punch down the dough, and on a lightly floured surface, shape it into a dove shape, or use a dove-shaped mold if available.

Place the shaped dough on a baking sheet lined with parchment paper. Let it rise, covered, for another hour.

Preheat oven to 350°F (175°C).

For the topping, gently press almonds into the surface of the bread and sprinkle evenly with pearl sugar.

Bake for about 30 to 35 minutes or until golden brown.

Remove from oven and let cool on a wire rack before slicing.
