Amaretti Biscuits

2 cups almond flour
1 cup granulated sugar
3 egg whites
1 tsp. almond extract
Powdered sugar for dusting

Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.

In a mixing bowl, combine the almond flour and granulated sugar.

In a separate bowl, beat the egg whites until they form stiff peaks.

Fold the beaten egg whites and almond extract into the almond flour mixture until well combined.

Scoop tablespoons of the dough, roll them into balls, and then lightly roll each ball in powdered sugar.

Place the dough balls on the prepared baking sheet, leaving space between each for expansion.

Bake in the preheated oven for 15-20 minutes or until the outsides are lightly golden and the biscuits are firm to the touch.

Allow the biscuits to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Enjoy the amaretti biscuits once cooled, ideally with a cup of espresso or sweet dessert wine.
