Cucumber Salad (Pai Huang Gua)

2 large cucumbers
1 tsp salt
2 cloves garlic, minced
2 tbsp rice vinegar
1 tbsp soy sauce
1 tsp sugar
½ tsp sesame oil
1 tbsp chili oil
2 tsp toasted sesame seeds

Wash the cucumbers and pat them dry.

Lay each cucumber on a flat surface and gently smash them with the flat side of a cleaver or a rolling pin. Break the cucumbers into bite-sized pieces.

Sprinkle salt over the cucumber pieces and let them sit for about 10 minutes. Then, drain any excess liquid.

In a small bowl, combine the minced garlic, rice vinegar, soy sauce, sugar, sesame oil, and chili oil. Stir well to create the dressing.

Place the cucumber pieces in a serving dish and pour the dressing over them. Toss gently to coat the cucumbers evenly.

Sprinkle toasted sesame seeds on top of the salad before serving.
