Sesame Balls (Jian Dui)

Method
Mix the glutinous rice flour, white sugar, and baking powder in a large bowl.
Gradually add warm water to the flour mixture while stirring to form a smooth, pliable dough.
Divide the dough into 12 equal portions.
Roll each portion into a ball.
Flatten each dough ball and place about 1 teaspoon of red bean paste in the center.
Gently fold the dough over the filling, seal the edges, and roll it back into a ball ensuring that the filling is completely enclosed.
Roll each filled ball in sesame seeds, pressing gently so the seeds stick to the surface.
Heat the vegetable oil in a deep fryer or a large, deep skillet to 350 degrees Fahrenheit (175 degrees Celsius).
Carefully place a few sesame balls into the hot oil. Do not overcrowd the pan.
Fry the sesame balls for about 2 to 3 minutes or until golden brown and floating on the oil’s surface, ensuring to turn them occasionally for even cooking.
Remove the sesame balls from the oil and drain on paper towels.
Serve warm for best flavor and texture.
