Dry-Fried Green Beans (Gan Bian Si Ji Dou)

Heat a wok or large frying pan over high heat until very hot. Add 1 tablespoon of vegetable oil and the green beans. Stir-fry the beans for about 6-8 minutes or until they start to blister and turn slightly brown. Remove the beans from the wok and set aside.
In the same wok, add the remaining tablespoon of oil. Add the ground pork and stir-fry until it is fully cooked and starts to crisp, about 5 minutes.
Add the garlic, ginger, and Szechuan peppercorns to the wok with the pork, continuing to stir-fry for another 2 minutes until fragrant.
Return the green beans to the wok. Add soy sauce, Chinese cooking wine, sugar, salt, and chili paste. Mix well and stir-fry everything together for another 2 minutes to blend the flavors.
Sprinkle chopped scallions over the top just before serving. Serve hot.
