Braised Mushrooms with Oyster Sauce

Clean the mushrooms and slice if they are large to ensure even cooking.
Heat the vegetable oil in a pan over medium heat.
Add minced garlic and ginger to the pan and sauté until fragrant.
Increase the heat to medium-high and add the mushrooms, sautéing until they begin to brown.
Add the oyster sauce and soy sauce to the mushrooms and stir to coat evenly.
Pour in the vegetable broth and bring to a simmer.
Combine the cornstarch and water in a small bowl to make a slurry.
Slowly add the cornstarch slurry to the pan while stirring, and cook until the sauce thickens.
Season the mushrooms with salt and pepper to taste.
Reduce heat and let simmer for another 5-10 minutes, allowing flavors to meld.
Garnish with chopped green onions before serving.
