Almond Jelly (Almond Tofu / Xing Ren Dou Fu)

1 tsp agar-agar powder
              1½ cu water
              ½ cu sugar
              1 cu milk
              ½ tsp almond extract
          Dissolve the agar-agar powder in water in a small pot and bring it to a boil over medium heat. Stir constantly to prevent any lumps.
Add the sugar to the pot and continue stirring until it is fully dissolved.
Lower the heat and gradually add the milk, stirring continuously.
Add the almond extract and mix thoroughly.
Remove the pot from heat and let the mixture cool slightly.
Pour the mixture into molds or a shallow dish. Allow to cool at room temperature.
Refrigerate the almond jelly for at least 4 hours or until set.
Serve chilled with optional fruit garnish and syrup or honey drizzled on top.
