Steamed Egg Custard (Dan Nai)
Serves 4
Ingredients
Method
Warm the milk in a saucepan over medium heat until it just starts to steam. Do not let it boil.
In a mixing bowl, whisk the eggs, sugar, vanilla extract, and a pinch of salt together until well combined.
Gradually add the warm milk to the egg mixture, stirring continuously to prevent the eggs from cooking.
Strain the mixture through a fine sieve into a large bowl to ensure it is smooth.
Pour the mixture into four small heatproof bowls or ramekins.
Prepare a steamer by bringing water to a boil. Place the bowls in the steamer, ensuring they do not touch the water.
Cover and steam over low heat for about 15 to 20 minutes or until the custard is set.
Carefully remove the custards from the steamer and allow them to cool slightly before serving. They can also be refrigerated and served cold.
