Steamed Sponge Cake (Ma Lai Go)

Sift together the all-purpose flour, baking powder, baking soda, and salt into a large bowl.
In another bowl, whisk the eggs and brown sugar until the mixture is smooth and creamy.
Add the milk, melted butter, and vanilla extract to the egg mixture and whisk until well combined.
Gradually add the dry ingredients to the wet ingredients, stirring continuously until the batter is smooth and free of lumps.
Pour the batter into a greased 9-inch round cake pan.
Place the cake pan in a larger pan with 2 inches of water, creating a water bath.
Cover the cake pan loosely with aluminum foil to prevent water from dripping onto the surface of the cake.
Steam over medium heat for about 30 minutes or until a toothpick inserted into the center of the cake comes out clean.
Remove the cake from the steamer and let it cool slightly before serving. Enjoy your Ma Lai Go warm or at room temperature.
