Osmanthus Jelly (Gui Hua Gao)

4 cu water
¼ cu dried osmanthus flowers
½ cu rock sugar
1 tbsp agar-agar powder

Bring the water to a boil in a medium saucepan.

Add the dried osmanthus flowers and rock sugar to the boiling water.

Reduce the heat and simmer until the sugar is completely dissolved, stirring occasionally.

Stir in the agar-agar powder and continue to simmer for another 5 minutes, ensuring the agar-agar is fully dissolved and the mixture is smooth.

Remove the saucepan from the heat and strain the mixture to remove the osmanthus flowers.

Pour the clear mixture into molds or a shallow dish.

Allow the jelly to cool at room temperature before refrigerating it until set, about 2-3 hours.

Once set, remove the jelly from the molds or cut into pieces if set in a dish.

Serve chilled.
