Macaron - Mixed Berry Jam

300 g. Wild Berry Jam
240 g. Sugar (Granulated)
30 ml. Lemon Juice
The ratio of mixed fruit to sugar is 1.25 : 1 Place all the ingredients in a pan and heat to 106ºC or 223ºF. Once you have reached the correct consistency , store in sterilised jars until you are ready to use.
