Calamares Rellenos (Stuffed Squid)

4 Squid
300 g. Minced Pork
1 Large Onion (Chopped)
3 tbsp. Olive Oil
6 tsp. Plain Flour
½ White Wine (Glass)
½ cup Water (Still)
10 g. Parsley (Chopped)
1 Saffron (Pinch of )
¼ tsp. Salt (Kosher)
¼ tsp. Pepper (Black, Cracked)
1 Egg Medium
Clean the squid (calamares)
Beat the egg and add it to the minced pork, season the mixture and add the chopped parsley.
Fill each squid with the meat mixture being careful not to overfill. Close the top of the squid with cocktail sticks and coat the squid with flour. Fry the stuffed squid in a little olive oil two at a time.
Fry the chopped onion in a saucepan with a little olive oil, add 2 tablespoons of flour and continue stirring continuously for 5 minutes. Add wine, water and a pinch of saffron. Add squid, cover saucepan with a lid and cook for 30 minutes on a low-medium heat.
Remove cocktail sticks and serve.
