Aubergine with Honey

Method
1 Aubergine (Fresh)
50 g. Plain Flour
2 tsp. Salt
60 g. Honey (Runny)
Peel, slice and salt the Aubergine and leave to stand for 15 minutes.
Then dry off the aubergine with paper towel and coat with flour.
Fry the aubergine in the oil until they are golden in colour on both sides.
Place a small amount of honey on each slice of aubergine and spread it over the slice with the back of a teaspoon.
Serve immediately.
