Potaje de Lentajas (Lentil Stew)

Method

500 g. Lentils (Green)
1 Onion
½ Tomatoes (Tinned, Chopped)
1 Pepper (Green Bell)
1 Garlic Clove
2 Carrots ( Fresh)
1 Bay Leaf
1 Saffron (Pinch of )
½ tsp. Salt (Kosher)
2 Chorizo Sausages
2 tbsp. Olive Oil

N.B. You can add 200g Pork Fillet to the dish.

Fry the onion, pepper and tomatoes in that order with a little olive oil until soft, then blend together and return the mixture to the pan with the rest of the ingredients.

Add enough water to cover the mixture, bring to the boil, reduce heat and simmer for one hour or until lentils are cooked or soft.
