Mediterranean, Lite Bite Vegan Gluten Free Lactose Free Nut Free, Pepper (Red Bell)

Ensalada de Pimientos Asados (Roasted Pepper Salad)

Ingredients

Method

3 Pepper (Red Bell)
1 Large Onion
1 tbsp Sherry Vinegar (or Vinegar of your choice)
2 tbsp Olive Oil
½ tsp Salt (Kosher)

Preheat oven to 180ºC / 350ºF

Clean peppers with a dry cloth and arrange in a dish and place in a preheated oven for 25 minutes or until peppers are soft.

Take the peppers out of the oven and place them in a plastic bag to cool.

When cool, remove from the bag and peel the skin off.

Cut in half, remove the seeds and cut into slices.

Add Sliced onion, vinegar, olive oil and salt to taste.
