Mediterranean, Main Course Vegetarian Nut Free, Courgette (Fresh)

Tarty de Calabazin (Courgette Pie)

Method

3 Courgette (Fresh)
1 Onion
140 g. Self Raising flour
125 ml. Olive Oil
4 Eggs
½ tsp. Salt & Pepper or to taste
100 g. Cheese - Cheddar (Strong Grated or a cheese of your choice)

Preheat oven to 180ºC / 350ºF

Grate the Courgettes, chop the onion and beat the eggs.

Combine all the ingredients, season to taste and place in an oven proof dish and bake in the oven for 30-40 minutes or until golden brown.
