Mediterranean, Main Course Gluten Free Lactose Free Nut Free, King Prawns

Garbanzos y Langoustines (King Prawns and Chickpeas)

Serves 4

Ingredients

Method

1 Chickpeas (Tinned)
350 g. King Prawns
1 Onion
8 Tomatoes (Cherry)
1 tsp. Chilli Powder or a fresh Chilli Pepper
250 ml. Chicken Stock 
1 -2 Garlic Cloves
1 tbsp. Olive Oil
½ tsp. Salt to Taste
1 in. Ginger (Fresh)

Peel and cut the onion into very thin rings and fry in olive oil for 5 minutes or until soft.

Add king prawns and chopped garlic and cook for a minute.

Cut cherry tomatoes in half and add to the pan, cook for a further 2 minutes.

Wash the chickpeas and add to the pan.

Add the stock and chilli powder or chilli pepper and season to taste, cook for a further 5 minutes.

Cut the ginger into 5 or 6 thin slices, add to the pan and cook for a further 3 minutes.
