Tarta De Tomato y Quest (Cheese and Tomato Tart)

375 g Ready Rolled Pastry (Puff)
              85 g Cheese - Coarsely Grated Parmesan
              450 g Pepper (Red Bell)
              1 tbsp Olive Oil for Drizzling
              4-5 Large Ripe Tomatoes 
              2 Cheese - 2 Packs of Mozzarella Balls 
              10 g Basil Leaves to Garnish 
              ½ tsp Salt to Taste
              ½ tsp Pepper to Taste
              1 Egg
          Preheat oven to 220ºC / 425ºF
Place baking sheet into pre heated oven.
Use the pastry to line a 20 x 30 cm baking tin, prick the base lightly with a fork.
Scatter the parmesan over the pastry base.
Lay the whole peppers across the pastry base with a little oil, season and brush edge of the pastry with the beaten egg, and bake for 15 minutes or until the pastry is puffy and golden.
Slice the tomatoes and mozzarella balls and lay alternating over the peppers.
Drizzle with oil, scatter with basil leaves and season with salt and black pepper.
