Verduras Mediterraneas (Mediterranean Vegetables)

2 Pepper (Red Bell)
2 Courgette (Fresh)
3 Onion (Red)
2 Tomatoes (Beef)
100 g. Cheese - Cheddar ( Medium Grated )
3 tbsp. Olive Oil
1 tbsp. Balsamic Vinegar
½ tsp. Salt to Taste
½ tsp. Pepper to Taste
1 tsp. Thyme (Dried)
Preheat oven to 180ºC / 350ºF
Make a mixture with thyme, balsamic vinegar and olive oil.
Cut the vegetables into wedges and arrange in a baking dish.
Coat with thyme mixture and sprinkle with cheese, bake for 30 minutes.
