Mediterranean, Side Dish Vegetarian Gluten Free, Cheese - Cheddar ( Medium Grated )

2  Pepper (Red Bell)
2  Courgette (Fresh)
3  Onion (Red)
2  Tomatoes (Beef)
100 g Cheese - Cheddar ( Medium Grated )
3 tbsp Olive Oil
1 tbsp Balsamic Vinegar
½ tsp Salt to Taste
½ tsp Pepper to Taste
1 tsp Thyme (Dried)

Preheat oven to 180ºC / 350ºF

Make a mixture with thyme, balsamic vinegar and olive oil.

Cut the vegetables into wedges and arrange in a baking dish.

Coat with thyme mixture and sprinkle with cheese, bake for 30 minutes.
