Mediterranean, Lite Bite Nut Free, Chorizo Sausage

Ensalada de Chorizo (Chorizo Salad)

Method

2 Chorizo Sausage
250 g. Tomatoes (Cherry)
1 Avocado (Ripe, Large)
1 Baby Leaf and Herb Salad Leaves (Bag of)
1 Small Chapati Bread
4 tsp. Olive Oil
1 tsp. Balsamic Vinegar
1 tsp. Sugar (Castor)
½ tsp. Salt and Pepper (to your taste)

Tear bread and fry in 2 teaspoons of olive oil until brown. Remove from the pan.

Slice chorizo and fry for 2 minutes, cut tomatoes in half and add to the chorizo.

Slice avocado and place in the salad bowl with the salad leaves, add cooked chorizo and tomatoes and any pan juices.

Drizzle over vinegar, sugar and olive oil and season to taste.
