Berenjenos con Queso (Aubergine with Cheese)

1 Aubergine (Sliced)
2 Cheese - 2 x Packs of Mozzarella
100 g. Parma Ham or Serrano Ham
15 g. Basil (Fresh to Garnish)
1 Tomatoes (Tinned, Plum)
3 tbsp. Olive Oil
1 Garlic Clove Crushed
½ tsp. Season to Taste
Slice aubergines and sprinkle with salt, coat with olive oil and saute in the pan.
Cut Mozzarella in slices and stack with aubergine, one aubergine, one mozzarella, one aubergine one mozzarella.
Grill until golden, then place a slice of parma ham on top and grill for a further minute.
Put tomato, crushed garlic, olive oil and salt in a frying pan and simmer for 10 minutes.
Pour sauce on a plate and place stacks of aubergines on the plate
