Gin and Tonic Sorbet

150 ml. Tonic Water
200 ml. Water
250 g. Sugar (Granulated)
1 Lemon (Juice of 1 Lemon)
100 ml. Gin
Place tonic water, water, sugar and lemon juice into a saucepan and bring to the boil. Allow to cool.
Add gin to taste. This is completely personal to you. Add as much or as little as you like.
When cool transfer to an ice cream machine. Churn until soft and icy texture ( my machine usually takes about 45 minutes but all machines vary), then transfer to a solid plastic container, seal and freeze.
Alternatively, freeze the mixture in a shallow container, beating 2 or 3 times during freezing.
Remove from the freezer 10 minutes before you are ready to serve the sorbet.
