Pâte Sucrée (Rich Sweet Pastry)

250 g. Butter (softened)
175 g. Sugar (Castor)
4 Vanilla Pod
2 Eggs (beaten)
500 g. Plain White Flour
Cream the butter and sugar until smooth, add vanilla pods and beaten eggs and mix together.
Sift the flour and add to the mixture until all the flour has been incorporated.
Knead by hand to finish off, wrap in cling film and leave to rest in the refrigerator for an hour.
Roll out on a floured surface.
