Italian, Main Course Vegetarian Nut Free, Plain Flour

500 g. Plain Flour
½ tsp. Salt to Taste
4 Eggs
6 Egg (Yolks)
2 tbsp. Olive Oil

Makes 800g

Sift the flour and the salt together, put into a food processor, add the eggs, yolks and olive oil. Blend until the mixture comes together as large crumbs. Stop the machine and check a little of the mixture, it should not crack when you press it between your fingers. If it does, blend it for a few seconds more.

Tip the mixture onto a board and knead it well until it is a firm, smooth ball of dough, that feels soft, but not sticky. Wrap the dough in cling film and leave it to rest for 1-2 hours.

Divide the dough into 8 equal pieces, knead each piece until smooth. Roll each one out with a rolling pin on a lightly floured board until you have a rectangle about 5mm thick.

Feed each rectangle of dough through the pasta machine first on No.1, then 2, then 3. Fold in half and feed on No.2 again, then 3, fold in half once again, then feed through No.2,3,4,5 etc. Finish by rolling it through twice on the thickness you require.
