Thai, Main Course Lactose Free

Oriental Sauce

Serves 4

Ingredients

Method

125 ml Red Wine
1 tbsp Honey
1 tbsp Soy Sauce
1 tbsp. Oyster Sauce
1 tbsp Rice Wine Vinegar
1 tbsp Sugar (Soft Light Brown)
1  Orange (Thumb Nail of Peel)
1  Lemon ( Thumb Nail of Lemon Peel
1  Chilli (Red)
1  Star Anise
200 ml Veal Stock (Fresh)
1  Lemon Juiced
½ cl Orange (Juiced)
2  Garlic Cloves
1  Onion (Shallot  Diced)
2  Onions ( Spring Onions Finely Chopped )
2 in (Thumbs of Ginger)

Put all ingredients except for the veal jus in a small saucepan, bring to the boil and reduce by half.

Add veal jus (you could also use a reduced duck stock) reduce to the required consistency. Skim off any impurities, pass the sauce through a fine sieve. and season to taste. It is now ready to use.
