Seafood Salad

Ingredients

Method

1 Fennel (Shaved)
1 Cucumber (Cut in half and thinly sliced)
12 Prawns (Cooked)
1 Squid
12 Mussels (Cooked)
1 Red Chilli( Finely sliced)
2 Onions ( Spring Onions finely sliced )
1 Garlic Clove (Grated)
1 Lemongrass (Remove hard outer leaves and slice remaining lemongrass very finely
75 ml. Sweet Chilli Sauce
2 tbsp. Fish Sauce

Finely slice the fennel and cut into bite size pieces. Cut the cucumber down the middle and finely slice. If not already cooked, cook the prawns and saute the squid in a pan. Cook the mussels in a very hot pan with a dash of water with a lid on for a few minutes until the mussels have opened.

Mix all the salad ingredients together in a bowl.
