Salad Nicoise

12 Boiled New Potatoes
175 g Cooked French Beans (ends trimmed)
150 g Kalamata Olives (Black Pitted)
½ Red Onion (Finely sliced)
4 Egg (Hard Boiled and halved)
1 Tuna (Tinned, In Oil)
100 g Capers
225 g Cherry Tomatoes (Halved)
150 ml Extra Virgin Olive Oil
125 ml Lemon Juice
1 tbsp Mustard (Dijon)
1 Onion (Shallot )
1 tbsp Mustard Wholegrain
½ tsp Salt (Kosher)
½ tsp Pepper (Black, Cracked)
There is no real recipe for this salad. You can use all or some of the ingredients listed and add a few of your own should you wish.
Lemon Vinaigrette
Place all the ingredients for the dressing in a bowl, whisk thoroughly to emulsify and set aside.
Salad
Arrange all the ingredients as you would wish into a large salad bowl and drizzle with the dressing.
