Salad Nicoise

12 Boiled New Potatoes
175 g. Cooked French Beans (ends trimmed)
150 g. Kalamata Olives (Black Pitted)
½ Red Onion (Finely sliced)
4 Egg (Hard Boiled and halved)
1 Tuna (Tinned, In Oil)
100 g. Capers
225 g. Cherry Tomatoes (Halved)
150 ml. Extra Virgin Olive Oil
125 ml. Lemon Juice
1 tbsp. Mustard (Dijon)
1 Onion (Shallot )
1 tbsp. Mustard Wholegrain
½ tsp. Salt (Kosher)
½ tsp. Pepper (Black, Cracked)
There is no real recipe for this salad. You can use all or some of the ingredients listed and add a few of your own should you wish.
Lemon Vinaigrette
Place all the ingredients for the dressing in a bowl, whisk thoroughly to emulsify and set aside.
Salad
Arrange all the ingredients as you would wish into a large salad bowl and drizzle with the dressing.
