North American, Side Dish Vegetarian Gluten Free Nut Free

Coleslaw

Ingredients

Method

1  Small - Medium Cabbage (White or Red shreaded)
2  Carrots ( Fresh grated)
1  Small Onion (optional sliced finely)
75 g Mixed Fruit
3  Celery (Sticks Chopped)
75 g Olives (Green or Black Pitted Olives Sliced)
1  Pepper (Red diced)
1  Large Apple diced
3  Sprigs of Parsley as a garnish chopped (optional)
2 tbsp - 3 tbsp Mayonnaise
1 tbsp - 2 tbsp Olive Oil
1 tbsp - 2 tbsp White Wine Vinegar

In a small bowl mix the mayonnaise, olive oil and white vinegar.

Mix all the ingredients in a large bowl and pour over the dressing. mix thoroughly and garnish with chopped parsley.
