North African, Side Dish Vegan Lactose Free Nut Free, Couscous

Tabbouleh

Serves 6

Ingredients

Method

140 g. Couscous
8 tbsp. Parsley (Finely Chopped Parsley)
4 tbsp. Finely Chopped Fresh Mint 
3 Tomatoes (Skinned, Seeded and Finely  Chopped)
¼ Cucumber (Peeled and Finely Diced)
½ Red Onion (Finely Chopped)
1 Juice of a Lemon 
3 tbsp. Olive Oil

Pour 200ml of boiling water over the couscous, leave for 15-20 minutes, stirring once or twice.

Mix all the remaining ingredients together. Tip in the couscous and gently mix, then taste and season . Cover and chill overnight.

Next day, stir and taste again. Season if necessary, then serve at room temperature.
