Chocolate and Orange Mousse

200 g. Chocolate (Dark)
50 g. Butter
2 Whole Oranges (Zest and Juice)
4 Egg (Yolks)
4 Egg Whites
1 Chocolate Flake for Decoration
Place the butter and chocolate in a plastic bowl and melt in the microwave for 30 seconds at a time until completely melted.
Once the chocolate mixture has cooled slightly, add the egg yolks and mix into the mixture.
Grate the zest of the oranges and juice them, whip the cream and mix them into the chocolate mixture.
Mix the egg whites to a stiff peak and place one third of the mixture into the chocolate mixture and fold through. Then add the remaining egg white mixture and very gently fold the egg whites into the mixture.
Place the mixture into your serving dishes or ramekins and decorate with the flake to your liking.
