Easter Biscuits

115 g. Butter
80 g. Castor Sugar
1 Egg Yolk
200 g. Plain Flour
¼ tsp. Pinch of Salt
½ tsp. Mixed Spice (Ground)
½ tsp. Cinnamon (Ground)
50 g. Currants
25 g. Mixed Chopped Peel optional
1 tbsp. Milk
1 tbsp. Castor Sugar
Preheat the oven to 180ºC / 350ºF.
Cream together the butter and sugar in a mixing bowl until they are light and fluffy.
Beat in the egg yolk and fold in the flour, salt and spices into the mixture. Then add the currants and the peel.
Add the milk a little at a time until you have a soft dough consistency.
flour your board and gently knead the dough and then roll it out until the dough is around 5mm thick.
Using a fluted 5cm cutter , cut out your biscuits and place then on a greased baking sheet.
Let the biscuits cool and then place them on a cooling rack to cool completely.
