Spaghetti Bolognaise

Method
To make the Bolognaise sauce:
Heat the butter and oil in a pan, add the chopped onion and fry until translucent. Add the mince and fry until all the meat has browned.
Drain off all the fat from the mince and then you can add the Mushrooms and garlic. Fry for a few minutes and then add the oregano, stock or wine, tomatoes and tomato puree.
Taste the sauce and season to your taste. Bring it to a simmer and then cover the sauce and leave to simmer for about 50 -60 minutes. If you feel it needs more liquid add some more stock.
When the sauce is almost ready, bring a large saucepan of salted water to the boil and cook the spaghetti according to the packet instructions.
Drain the pasta thoroughly and return the pasta to the pan and add the butter. Stir the butter through the spaghetti and season with nutmeg, salt and pepper to taste.
Place a portion of spaghetti into a bowl / plate and spoon a portion of sauce onto the top of the spaghetti and sprinkle with parmesan cheese.
