North American, Lite Bite Vegetarian Gluten Free Lactose Free Nut Free, Beans (Red Kidney Beans, Jar or Tin)

Vegetarian Chilli

Serves 4

Ingredients

Method

1 Large Onion (Chopped)
2 Garlic Cloves (Crushed)
1 Aubergine (Diced)
1 Pepper (Green Bell, Diced)
2 Carrots (Sliced)
150 g. Mushrooms (Sliced)
2 Tins of Tomatoes ( Chopped)
2 tbsp. Olive Oil
860 g. Beans (Red Kidney Beans, Jar or Tin)
45 ml. Tomato Puree
1 tsp. - 3 tsp. Chilli Powder to taste
¼ tsp. Salt and Pepper (to your taste)

Fry the vegetables in the oil until soft.

Heat up the beans in a large saucepan and add the vegetables and puree.

Season and simmer for 30 minutes.

Serve with pittas, sour cream and tortilla chips.
