Ginger Biscuits

Preheat the oven to 180ºC / 350ºF
Grease a baking tray.
Sieve the flour into a bowl and stir in the sugar, Bicarbonate of soda and ginger and mix together.
Place the syrup and the lard in to a small pan and warm on a low heat until the lard has completely melted.
Pour the warm mixture into the flour mixture and beat well.
In a separate bowl beat the egg and add it to the flour mixture and beat it into the mixture.
Divide into pieces about the size of a walnut, (it should make around 24). Roll the dough in the palm of your hand until smooth.
Place on a baking tray with enough room in between each ball of dough to flatten slightly.
Bake for 12-15 minutes until a rich golden colour and firm to the touch.
If you tap the baking tray sharply against the table top as you bring it out of the oven, the biscuits will have the "cracked" appearance of ginger biscuits.
