Traditional British, Sweet Treat Vegetarian Nut Free, Self Raising Flour

Scones

Serves 12

Ingredients

Method

250 g. Self Raising Flour
¼ tsp. Salt (Pinch of Salt)
40 g. Butter
125 ml. Milk
1 tbsp. Sugar (Granulated)

Preheat the oven at 220ºC / 425ºF

Grease a baking tray.

Sieve the flour and salt into a mixing bowl and rub in the cubed butter with your fingertips until the mixture looks like breadcrumbs.

Pour the milk into the mixture and mix to s fairly soft . but not sticky, dough.

Knead lightly then roll out until the dough is 1cm thick.Use a medium cutter to cut out rounds and place on the greased baking tray.

Brush with milk and bake for 12-15 minutes until golden brown on the top. Cool on a wire rack.

Currant Scones

Make and bake exactly the same way , but add 25g sugar and 75g currants to the mixture after you have rubbed in the butter.

Cheese Scones

Make and bake in exactly the same way as the plain scones but add 75g grated cheese and 1/2 level teaspoon of mustard to the mixture after you have rubbed in the butter.
