Oat Crunchies

125 g. Oats
50 g. Medium Oatmeal
150 g. Sugar (Soft Light Brown)
120 ml. Vegetable Oil
1 Egg
½ tsp. Almond Essence
Place the Oats, oatmeal, sugar and oil in a mixing bowl, mix well and leave to stand for 1 hour.
Preheat the oven to 160ºC / 325ºF.
After 1 hour add the egg and almond essence and mix thoroughly.
Grease a baking sheet and place teaspoons of the mixture 2-3 inches apart to allow room for the biscuits to spread and press flat with a damp fork.
Bake in the oven for 15-20 minutes until golden brown.
Leave to cool for a few minutes then place on a wire rack to cool. Makes 30 biscuits.
