Indian / Pakistani, Lite Bite Vegan Lactose Free Nut Free, Vegetables (Frozen Mixed Veg)

Ingredients

Method

4 tbsp Vegetable Oil
½ tsp Cumin Seeds
500 g Vegetables (Frozen Mixed Veg)
1  Potatoes
1 tsp Ginger, Garlic, Chilli Pulp*
½ tsp Cumin Powder (Ground)
½ tsp Coriander Powder (ground)
½ tsp Chilli Powder
¼ tsp Turmeric Powder
½ tsp Salt (Kosher)
2 tsp Lemon Juice
15 g Coriander (Fresh Chopped)

In a saucepan heat the oil over a medium heat.

Once hot add the cumin seeds and allow to fry for 15-20 seconds.

Then add the vegetables including the potatoes and the dry spices and salt to taste.

Cook until the potatoes begin to go mushy.

Once cooked stir in the lemon juice and chopped coriander.

Allow to cool before using. ¡¡* The fresh ginger, garlic Chilli pulp is the same amount of each ingredient blended together with some water.
