Gin and Tonic Drizzle Cake

Ingredients

Method

250 g. Butter (Unsalted)
250 g. Sugar (Castor)
250 g. Self Raising Flour
4 Eggs Large
1 Lime (Zest)
75 g. Sugar (Castor)
75 ml. Gin
75 ml. Water
225 g. Sugar (Icing)
60 ml. Gin

To make the Cake:

Preheat the oven to 170ºC / 325ºF

Grease and line a 2 pound loaf tin.

in a stand mixer or with a hand whisk cream together the butter and the sugar mixing for at least 3-4 minutes until it is light and creamy.

Add the eggs until mixed through then fold in the flour and lime zest until you have a smooth mixture.

Pour the mixture into your prepared loaf tin and bake for 40-45 minutes or until a skewer comes out clean or the cake is cooked.

Remove from the oven and allow to cool while you make the drizzle.

Drizzle

In a small heavy based pan on a low - medium heat, place the sugar, gin and tonic in a pan and dissolve the sugar. Once dissolved pierce the cake with a skewer and drizzle the warm liquid over the cake.

Allow the cake to cool completely in the tin.

Icing

Place the icing sugar into a bowl and gradually add the gin whilst mixing until you have pourable consistency. Remove the cooled cake from the tin and pour over the icing and sprinkle with lime zest.
