Salmon with Orange and Chilli

Method

850 g. Whole Side of Salmon 
2 Orange (Both Zested, One Juiced and One Thinly Sliced
2 Chillies Finely Chopped
2 tbsp. Sesame Oil
2 Garlic Cloves Crushed
500 g. Fennel (Thinly Sliced)

Preheat the oven to 200ºC / 180ºC Fan

Line a baking sheet with foil and scatter the finely sliced fennel over the tray.

Place some of the sliced oranges on the top of the fennel and then place the side of salmon on top, skin side down and then place the remaining orange slices on the top of the salmon.

Mix together the orange juice, zest, sesame oil, chilli and garlic and season to taste.

Gently pour the dressing over the salmon and place in the centre of the oven for 20 minutes or until cooked through.
