Vegetable Pakoras

Method

6 tbsp. Gram Flour Heaped
230 g. Vegetables (Frozen Mixed Veg)
3 tbsp. Yoghurt (Full Fat Plain)
1 tsp. Ginger, Garlic, Chilli Pulp *
½ tsp. Chilli Powder
¼ tsp. Turmeric Powder
½ tsp. Coriander Powder (ground)
½ tsp. Cumin Powder (Ground)
½ tsp. Cumin Seeds
¼ tsp. Salt to Taste
½ tsp. Baking Powder
6 tbsp. Water To Mix To Form A Thick Batter
1 l. Vegetable Oil For Frying

Mix all the ingredients together in a large bowl except the water. Gradually add enough water to make a thick batter, you may not use it all you may need more. The batter should be thick enough for you to pick up small amounts and place in the oil.

Heat up the oil in a large wok type utensil until a small amount of batter placed in the oil sizzles and rises to the surface.

Place small amounts of batter (the size of a walnut) in the oil and allow to cook for about 4-5 minutes until golden in colour.

Only ever add enough clumps of batter in the oil to form one layer or they will stick together.

Once cooked on all sides, remove from the oil and place on kitchen paper and cook the rest of the pakoras in the same way.

Pakoras can be served hot or stored and served cold as a snack. ¡¡* Ginger , garlic, chilli pulp id equal quantities of all three blended together with a little water.
