Matar Bhat (Rice With Peas)

2 tbsp. Vegetable Oil / Ghee
½ tsp. Mustard Seeds (Black)
275 g. Basmati Rice
570 ml. Cold Water
1 tsp. Salt (Kosher)
160 g. Peas ( Fresh, Frozen or Tinned)

Wash the rice and soak for at least 30 minutes.

Heat the oil in a heavy bottomed pot (with a tight fitting lid- to be used later). When hot add the mustard seeds and allow to darken, about 20 seconds.

Put in the rice and peas and stir to allow the rice to be coated with the oil.

Add the water and salt and bring to the boil.

Cover and reduce the heat to very low, leave to cook for 25-30 minutes.
