Pork Kebabs with Tomato Sauce

750 g Pork Fillet
125 g Mushrooms (Button)
175 g Tomatoes (Cherry)
4 Bay Leaves
2 tbsp Lemon Juice
1 tbsp Pernod
4 tbsp Olive Oil
¼ tsp Salt and Pepper (to your taste)
1 tsp Oregano (Dried)
1 Small Onion Finely Chopped
1 Sick of Celery Finely Chopped
400 g Tomatoes (Tinned, Chopped)
1 tbsp Pernod
1 tsp Sugar (Granulated)
1 tbsp Tomato Puree
Cut the pork into 2.5cm cubes. Thread the meat alternatively with the mushrooms, cherry tomatoes and bay leaves onto 4 large skewers.
Whisk together the lemon juice, Pernod, olive oil, salt, pepper and oregano.
Brush over the kebabs and grill for 15-18 minutes. Turning occasionally and brushing with the marinade.
Meanwhile make the sauce. Place all the sauce ingredients into a pan, bring to a boil and then turn down to a simmer and cook uncovered for 10-12 minutes until thickened. Season with salt and pepper.
Serve the kebabs and sauce with rice.
