Classic French, Main Course Gluten Free Nut Free

Tarragon Chicken

Method

25 g. Butter
2 Bacon (Streaky Bacon Chopped)
2 Onion (Sliced)
2 Carrots (Sliced)
4 Boneless Chicken Breast
50 g. Chicken Livers
3 Tarragon (Sprigs)
300 ml. Chicken Stock 
1 tbsp. Sweet Sherry
¼ tsp. Salt and Pepper (to your taste)
1 tsp. Cornflour
3 Tarragon Sprigs for Garnish

Preheat oven to 160ºC / 325ºF

Melt the butter in a frying pan and add the bacon, onions and carrots, cook for a few minutes and transfer to a casserole.

Brown the chicken on both sides and transfer to the casserole. Finally brown the chicken livers and place around the chicken.

Add tarragon, stock, sherry, seasoning, cover and cook. Thicken gravy with cornflour and pour back over the chicken.

Taste and adjust the seasoning. Garnish with fresh tarragon if available.
